Ground Back Fat

Looking for fresh pork lard for cooking with, or supporting your keto or carnivore diet? Our pork back fat comes from the fat on the back of the pig. Our animals are fed a GMO-Free diet. Lard from pigs grown outdoors is high in Vitamin A, D, E and K.

How to render farm-fresh lard at home

Our back fat is pre-ground for ease of rendering.

  1. Defrost fat.
  2. Pop it in a heavy-bottom pot over low heat or in a large slow cooker. (DO NOT add water. It is not necessary and will compromise your finished product. We are trying to get the water OUT.)
  3. Keeping a close eye on it to ensure fat bits do not stick and burn on the bottom, stir occasionally.
  4. Your lard is done once most of the fat bits are golden in colour and have settled to the bottom. The fat should have more or less stopped bubbling as well.
  5. Allow to cool slightly and carefully strain into a heat-proof container. (Mason jars work well.)

Pickup is at the Farm, located at 6238 256 ST, Langley.

At Coghlan Cottage Farm we specialize in raising rare-breed Berkshire and Gloucester Old Spot pigs.

These old breeds produce pork that is much more flavourful than the commercial breeds you'll find almost everywhere else.

Berkshire pork sports spectacular marbling and rich, dark meat.
